The desired temperature to have your oil is between 190 and 215 degrees Fahrenheit. Cooking times can range from a few seconds to several minutes, depending on the thickness of your food. Do not overcook the tempura. You will also notice when frying with tempura batter, that little bits of batter will come off during cooking. Be sure to scoop these out as you take your food out of the fryer. This is a wonderful little extra crunch on the dinner plates, but the biggest reason for removing it is to not let them burn in the oil, as it will leave a bad flavor in the oil for your next batch of food.
