Start out by shucking the oyster from the shell and draining the oyster meat. In a medium sized mixing bowl, combine eggs and milk to start creating the batter. You want to make sure that it is mixed evenly so that the yolk is thoroughly mixed in with the whites.

Next, you want to create your dry mix. Take some flour and mix it with Andy’s Seasoning Fish Breading. Like any fried recipe, you will have to roll the oyster meat into the flour mixture and dip it into the batter mixture. You may want to add a final coating by rolling it through the flour mixture a few times if you want a crispy texture to the fried oysters.

Cooking the oyster is very simple. You can use a regular pan and fry it in oil until it becomes crispy and golden. The whole process usually takes anywhere from 3-5 minutes. Be sure to only fry a few at a time as frying large quantities can make the temperature of the oil decrease thus making the oysters cook slower. Make sure you don't leave oysters in the oil too long or they will become soggy. You will want to place the fried oysters on a paper tower to drain off the excess oil. If you are serving these later, this will also keep it from getting soggy faster.

Andy’s Seasoning has two types of products that you can use for oysters. Andy’s Seasoning Tempura Batter and Andy’s Seasoning Fish Breading. The Tempura Batter is lighter and flakier while the Fish Breading holds the great taste of breading. If you want your oysters to have a little kick to them, then try Andy’s Seasoning Cajun Fish Breading. It adds the heat and flavors that you are looking for. How about a healthier version? Then just go with Andy's Fish Breading with NO MSG. It has the same quality you'd expect from Andy's breading only without the MSG.
