A Mouthwatering Southern Style Catfish

You don't have to be from Louisiana or Texas to enjoy the mouthwatering taste of southern style catfish. This is a dish that is popular with people around the US and for good reason. The flesh is so succulent and moist that it can melt in the mouth when cooked right. Moreover, it is a healthy and affordable alternative to red meat such as beef and pork. Why not try out the following recipe and give your family a treat.

When it comes to preparing the meal, you will need to decide whether to use ready made seasoning or prepare your own. Both these options have their plus and minus points. If you decide to experiment and create your own seasoning, you will need to purchase many ingredients and mix them in the right amounts. Unless you have a recipe ready for this, this will be a trial and error process. If you are to use ready made seasoning, choose a well known and established brand like Andy's Seasoning. The rich and textured flavoring will make every meal taste extraordinary.

You will need to have a large and deep cast iron skillet or a heavy pot for the frying. It is best to use peanut oil or vegetable oil for the frying process. This should be fresh oil rather than used oil that has been used for other food.

Take your fillets and rinse them in cold water, then shake off excess. Prepare your seasoning in a large shallow dish. Coat each fillet with the cornmeal mixture. In the skillet add oil so that it is around two inches deep. Wait until it is around 375 degrees Fahrenheit before adding the fillets. These can be cooked in batches of two or three depending on the size of the pan used.

It should only take around 2 to 3 minutes on each side or until fillet becomes golden brown and crispy. When you believe that they have been cooked through, remove with a spatula or slotted spoon and place to dry on paper towels. To keep the fillets warm after draining, they should be placed on a wire rack in a preheated oven. Do not cover the fish as this can destroy the crispiness of the batter.

This southern style catfish recipe works well with boiled hush puppies. To add some zest you can liven up the dish with a splash of lemon or some hot sauce. This recipe is great to offer when inviting friends over for a meal. Its simple, quick, and very tasty.
