Tilapia Fillets in Zesty Breaded Lemon Sauce

Ingredients

1 lb. tilapia fillets
1/2 cup melted butter or margarine
1/4 cup lemon juice, fresh or concentrated
1 cup Andy's Red Fish Breading
1 tbsp. chopped parsley
1/2 tsp. paprika, regular or hot

Directions

  1. Melt butter or margarine. Combine melted butter and lemon juice.
  2. Mix Andy's Red Fish Breading, parsley, and 1/4 cup of the lemon-butter mixture together in a medium bowl.
  3. Add paprika to the mixture.
  4. Wash fish and pat dry with paper towel.
  5. Dip tilapia fillets in the breading mixture (reserving some of the mixture for a later step).
  6. Let fillets stand several minutes for coating to adhere.
  7. Brush fillets lightly with remaining lemon-butter mixture. Place fillets in an oven-proof dish. Broil until the tilapia fillets flake easily when poked with a fork.
  8. Top with the reserved breading mixture and broil again until the mixture topping is heated through and lightly brown.
